Quick, vegan lunch and recipes ideas
Here are a few things I have no patience for when it comes to food right now: Hours of prep, mile-long ingredient lists and instructions, any exotic, bougie ingredient I have to scour the earth for, and anything that doesn't lend itself to leftovers for the next day(s).
Basically, I'm currently all about anything basic, simple, and easy to make in bulk, and I'm hearing y'all are in the same kinda place.
That's why I decided to throw together this blog post with just a few super-quick, super-easy, and of course all vegan, food ideas, to get you guys some ideas of what to make for weeknight dinners or packable lunches for work next week. I'd recommend picking the two or three recipes from this list that speak to you, making them over the weekend, and enjoying ready-to-go lunches or dinner all week as you need them!
Mexican Rice and Beans Skillet: Doesn't get easier or cheaper or more basic-vegan than rice and beans y'all, but this recipe is anything but boring, and also endlessly adaptable depending on your taste buds.
Lemon Hummus Pasta with Veggies: Can't beat pasta in terms of simplicity, and if you're wanting something a little lighter and more incentive than marinara sauce, enter: hummus.
Protein Loaded Enchiladas: The ingredient list is a liiiittle long on this, however, you can easily leave our hemp hearts if you don't have them, and use storebought enchilada sauce to save a ton of time.
Peanut Buddha Bowl: Doesn't' ever get any simpler or more nutritiously complete than a bowl with rice, some veggies, protein, and a sauce. That's my go-to formula for every single lunch and dinner, and this peanut sauce is drinkable-levels of good.
Tempeh Sloppy Joes: Basically every summer all my body wants is BBQ type foods like burgers, hotdogs, watermelon, and corn on the cob, so these vegan (obvs) sloppy joes are speaking to me big time. Tempeh is the base, which is LOADED with protein, crazy cheap, and easy to find at any major grocery store nowadays.
Sweet and Sour Chickpeas: This will never not be a go-to of mine--it's just so simple, healthy, and tastes like takeout Chinese (which is a huge weakness of mine, don't judge.)
I hope these were helpful and gave you some ideas! I basically live to prove you don't need to break the bank or eat nothing but salads to be vegan, and if this is speaking to you, I'll keep making this type of post!
