Meatless Monday: DIY Chipotle, Curries, & Reuebens
Sometimes I have a hard time believing I used to live off of meals like frozen tilapia, baked chicken breast, Walmart frozen mixed veggies, or probably the most depressing, canned Campbell's Tomato soup I'd buy in bulk. Sad, but that was my reality...for years. I think people see my Instagram or blog posts like these and assume I've always eaten well, but...not so y'all. I think that's why I'm SO jazzed-up 24/7/365 about good food (and lots of it) nowadays--because I punished my body with a bland, "low calorie," "carb-free," 100-calorie snack pack type of eating so wayyy too long.
It's the same with fitness--once you know what it feels like to have a healthy, fit body, there's no going back. Once you realize the variety of delicious, vegan foods out there to sample and enjoy, you too will feel like there's so little time, sooo much food to try!
With that little backstory out of the way, here's what on the menu 'round here this week, and what I've been testing and enjoying since last week's post!
DIY Chipotle Bowls
Have you gotten it yet? I'm a littleeee bit of a fan of a good bowl.I can't even claim that I was the chef in the kitchen on these bad boys--but I did very happily enjoy being the one eating some amazing DIY Chipotle style bowls this week. Beans + rice + veggies + salsa + whatever other toppings you enjoy....I've said it before and I'll say it again--eating vegan truly doesn't get cheaper or easily that a good old burrito bowl equation, which you can swap up and get as inventive or bare-bones as you want! Here's a great one to start with!
Having the obsessive personality with food that I do, one time in high school, I legitimately ate a reuben sandwich for lunch every day for about 6 months...at least. Thanks to this recipe, I have a sneaking suspicious that little kick may be coming back for round 2....and this time, it'll be a heck of a lot yummier and healthier, with protein-packed tempeh, vegan cheese (or you can swap out avocado for an even healthier option), and DIY vegan Russian dressing all under a pile of DIY sauerkraut (which I make using this foolproof recipe!)
Chickpea Spinach Curry Bowl
I could absolutely eat Thai food every single day--specifically curry. While it's one of my favorite things to get at a restaurant (if you're ever dining out with friends and Thai is an option, go for it--it's so easy to veganize!), sometimes I want to be able to whip up a hearty, healthy, spicy curry at home. This one is protein-packed and also full of iron, thanks to the chickpeas and spinach. You can add anything you want in terms of veggies, so if you're feeling potatoes and cauli, for example, go wild.
Tofu is for SURE one of the most-hated "vegan foods" out there, and I'm 110% sure that's because it also happens to be one of the most often botched, in terms of how people make it. Honestly, it's pretty easy to mess up, and messed-up tofu just tastes like a spongy, soggy pile of air...AKA bland and disgusting. The tricks to tofu are basically, pressing out the excess liquid before you do anything, and then seasoning the living daylights out of it, since it's essentially nothing more than a protein-y sponge. If you need a great staple tofu recipe that'll be a total crowd pleaser, you can't go wrong with BBQ. Sidenote, this recipe calls for a tofu press, but I've been vegan for 3 years and don't own one--I literally just ghetto-it-up and press my tofu between stacks of dinner plates. No need to be fancy :)
