Meatless Monday: My Favorite Meals to Prep
Deep in the heart of Holiday "excuse season," It feels VERY good to say that I am "back on track" with my meal prepping.
Anyway, for lack of a better term, I am now "back on track," with meal prepping, vs. the past oh, five months, when I was quite intentionally off. Ever since my bikini show, I have given myself the freedom and long leash that I mentally and emotionally needed, when it came to my food choices. After tracking and counting and monitoring diligently, I needed the room to just be.
This meant accepting my clothes would get snugger; buying the foods that spoke to me at the grocery store, allowing myself the beers and burgers I knew didn't agree with me (gluten and I are not friends,) or as was often the case, actually eating far less some day than I knew I needed to, just because I wasn't that hungry.
I had my fun, and now I'm back to a liiiittle more discipline and structure.
Not because I'm punishing myself, or because I dislike my body, or because I'm hating the way I look--quite simply because I've chosen to. Treat meals and junk--eh, I've had my fill of you, for now.
I go into this choice with total freedom and self love, not out of any desperate or self loathing--and DAMN that feels good.
Breakfasts: Carrot Cake Oats
These are sweet without sugar and so much yummier than regular old oats.

Lunches: Freezer Burritos
This recipe isn't inherently vegan as written, but just swap out vegan cheese and/or sour cream and you're good to go! We made four of these on Sunday, wrapped them in foil, and froze two. Cameron will just pop them into the microwave or toaster oven (remove foil first if microwaving!) and bam, lunch!
