Meatless Monday Roundup
Happy Monday y'all! It's the height of summer + bulking/improvement season for me around here. So while I'm still working out HARD toward my goal of putting on some serious vegan gainz, the extra calories/carbs alsooo means now is the time I get to test out some extra "fun" foods...and share them with you, right here. You're welcome :)
There will be a day not tooo far away where I'm back to uber-clean macro bowls and oatmeal and veggies, but for now, I'm having a blast still eating clean 80% of the time, but also definitely treating it like it's my JOB to experiment with recipes like nachos, cookies, and vegan wings.
Rough life, I know.
I'm not sure what's gotten into me, but I've been on a serious kick lately trying out various vegan breakfast sandwich recipes, which is not something I even normally eat...but, here we are! I've been testing out lots of store bought breakfast patties, sausages, and english muffin vs bagel combos, and have come to the conclusion that english muffin + homemade tofu "egg", plus a slice of vegan cheese and/or avocado is the winning combo. Plus, there's something oddly fun and satisfying about cutting out rounds of tofu with a cookie cutter and turning them into a strangely-egg-like thing, thanks to the magic of turmeric.
You can easily up the spices in this recipe to your liking, plus add in any desired toppings like a slice of tomato and some hot sauce as seasoning (always), but this will get you started!
Lately I've been REALLY feeling big salads (I think of the Seinfeld reference everytime I say that) for lunch...some type of protein atop of chopped romaine, tomatoes, cukes, mushrooms, olives...etc. I've been reaching for Morningstar brand buffalo vegan wings, which I gotta say I am HOOKED on, however, for a far healthier alternative, you can easily make your own buffalo tempeh strips with this recipe.
For a second great lunch option, cause I couldn't just pick one...
BBQ Quinoa Tofu Bowl
Because honestly though....everything is better covered in BBQ, just about. This is my go-to kinda meal: big bowl, grains, veggies, protein, smothered in sauce. Just leave off the sauce till the day of and this would be a great make-ahead meal for the week!
I hate having to say the phrase "hmm...that's one thing that's hard to make vegan," which, until I saw this recipe, was my response when someone asked about how to replicate steak. I know of cauliflower steaks or portabello steaks of course, but I mean, come on...if you're jonesing for a real steak, I don't think that's gonna cut it. However, after seeing this recipe, I think I may have found a solution! I'm not sure why I never thought to try a seitan steak, but I've been meaning to whip up some DIY seitan anyway, so I will be testing this out ASAP! Let me know if you beat me to it, and what your verdict is!
And just for fun, I stumbled up on this video from Jenna Dewan, taste testing a crap ton of vegan fast food options--ones I didn't even know existed, in many cases! Not a proponent of fast food ever, BUT I will say, it's helpful to know the options exist out there, if for no other reason than to have a comeback when that naysayer in your life says "...but, pizza and burgers!?," or something of that nature...Have a great week y'all, and happy cooking/eating! <3
